Recipe Time! Black Eyed Pea Special

In the South in general, and in Texas in particular, tradition calls for black eyed peas on New Years day. This recipe is a family favorite.


The directions are for an Instant Pot, but it's easy to adjust for stove top or slow cookers. For a real southern New Years dish serve this with a thick slice of ham and buttered cornbread.


Black Eyed Pea Special


3 Slices of bacon

1 teaspoon pepper

2 stalks of celery, chopped

1 small onion, chopped

1 small bell pepper, chopped

1 16oz can diced tomatoes, undrained

1 1/2 cups water

2 10 oz packages of frozen black eyed peas

1 teaspoon Worcestershire sauce

1 teaspoon salt


Set Instant pot so saute high. Fry bacon until crisp. Remove bacon, reserving dripping. Crumble bacon and set aside.


Saute onion, bell pepper and celery for 5 minutes, or until onion is translucent. I add the salt at this time to speed the process.


Add remaining ingredients (except bacon) and bring to a boil.


Reduce heat to saute low, cover and simmer for 30 minutes.


Set Instant pot to slow cook high, add the bacon, cover and simmer for another 30 minutes.


If peas are tender, your done!
